White Bean and Greens Soup

A gentle, filling soup that is easy on the stomach on lower-appetite days.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 6 cups low-sodium chicken or vegetable broth
  • 4 cups chopped kale or spinach
  • 1 tsp dried thyme
  • Salt, pepper and a squeeze of lemon

Method

  1. Warm the oil in a large pot and soften the onion, carrot and celery for 6-8 minutes.
  2. Add garlic and thyme and cook 1 minute.
  3. Add the beans and broth, bring to a simmer and cook 15 minutes.
  4. Mash a few beans against the pot to thicken.
  5. Stir in the greens until wilted, then season with salt, pepper and lemon.

Around 280 calories and 16 g protein per bowl. Freezes well in single portions.
