Ingredients
- 1 cup dry brown lentils, rinsed
- 1 tbsp olive oil
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 3 cups low-sodium vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tsp cumin
- 2 cups baby spinach
Method
- 1. Heat the oil in a pot and soften the carrot, celery and onion, about 6 minutes.
- 2. Add the lentils, broth, tomatoes and cumin.
- 3. Simmer covered for 30 minutes, until the lentils are tender.
- 4. Stir in the spinach until wilted and serve.
About 320 calories, 18 g protein and 15 g fiber per serving.
