Hearty Lentil and Vegetable Stew

A fiber-rich stew that freezes well and keeps you full through the afternoon.

Ingredients

  • 1 cup dry brown lentils, rinsed
  • 1 tbsp olive oil
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 3 cups low-sodium vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp cumin
  • 2 cups baby spinach

Method

  1. 1. Heat the oil in a pot and soften the carrot, celery and onion, about 6 minutes.
  2. 2. Add the lentils, broth, tomatoes and cumin.
  3. 3. Simmer covered for 30 minutes, until the lentils are tender.
  4. 4. Stir in the spinach until wilted and serve.

About 320 calories, 18 g protein and 15 g fiber per serving.
